We’re still having a great time in Belize - what a wonderful country this is and I’m so surprised at how delicious the food is! Possibly my favorite Latin America and Caribbean cuisine so far. Today we leave the islands to head up to the mountains at an eco retreat… and possibly jaguars!! I mean they’re pretty rare to see, but you never know. As long as it’s not too close or hungry!
