Cinco de Mayo is a holiday that commemorates the Mexican army’s victory over French forces at the Battle of Puebla on May 5, 1862. The battle was an important symbol of Mexican resistance to foreign domination.

While Cinco de Mayo is not an official Mexican holiday, it is still celebrated in parts of Mexico as a way to remember the bravery and sacrifices of the soldiers. In the US, Cinco de Mayo has become a popular celebration of Mexican culture..

It’s important to choose respectful, culturally sensitive, and festive ideas you can use for your Cinco de Mayo celebration. Make the holiday about the history and avoid anything that reinforces racial or cultural stereotypes, including wearing sombreros, ponchos, and fake mustaches

Instead use it as an opportunity to support Mexican owned businesses and enjoy flavors from their delicious cuisine.

We'd like to highlight Fritos Burgers & Tacos on Hillsborough St. We spent time with owner Saul in his converted yellow school bus which has now turned into one of Hillsborough Street’s best-kept (but quickly growing) taco secrets.

What we loved was his commitment of serving up big flavor on a small budget. Greed does not fuel his taco bus!

He’s on a mission to bring the community fresh, affordable tacos—and his famous $1 tacos (Tuesdays) often have lines wrapping around the patio of his brother’s pizza shop. Speaking of which you’ll love sitting in the patio under the canopy of rainbow-colored umbrellas as you tuck into delicious tacos.

And yes, that is $1 delicious tacos every Tuesday - no limit. Today, he is offering a free elote with the purchase of 5 tacos - and he just may be correct in saying he has the most delicious street corn in Raleigh.
